Chicken Stroganoff

Another easy slow cooker meal!

2-3 boneless chicken breasts
1 white onion (diced)
1 can of mushrooms -(optional) I didn't happen to have any!
2 cans cream of mushroom soup
1/2 cup of water
1 tsp of diced garlic (or more!)
1 tsp of dried thyme & parsley
Black pepper

Your choice of egg noodles

Add all ingredients (except noodles) in crock pot & cook on low for 8 hours. Cook noodles on stove top right before you are ready to eat!

Spinach, Chicken & Wild Rice Soup

1 cup of frozen chopped spinach

3 chicken breasts
1 cup of baby carrots
2 stalks of celery
1 can of cream of mushroom
1- 6oz package of wild rice
Unsalted chicken broth
2 cups of water
Black Pepper





Another slow cooker recipe, as promised!
    First put bring the chicken breasts to a boil on your stove. Then turn heat down to low & let them cook for about 30 mins.



Cut chicken in bite size pieces, place in crock pot. Add all other ingredients into crockpot, use all of the chicken stock. For the celery I like to use the leaves as well.


To thinly slice my carrots I used my hand mandoline slicer. You could also grate them if you wish! Cook the soup in your slow cooker on LOW for 8 hours or HIGH for 3 hours.

Beer-braised short ribs


2-5 lbs of boneless beef short ribs
12 oz of water & 3 beef bouillon cubes
1 - 12 oz can or bottle of dark beer
1 onion (diced)
1/4 cup of molasses (I didn't have any so I used brown sugar & the sauce wasn't very thick)
2 tbsp of balsamic vinegar
1 tsp dried thyme
1/2 tsp of black pepper
1/2 tsp of hot sauce

Sprinkle beef with black pepper & sear in skillet on all sides. Next put all of the ingredients in your crock pot & cook on low for 8 -10 hours. For sides we had baked beans & corn.

Dijon Pepper Steak

Ok so the picture of this dinner, isn't the best! I have had a cold, so that is my excuse. The steak was so tender, a knife is not required for this meal!


1- 2 Lbs beef - top sirloin steak (cut into 1 inch strips)
1 1/2 tsp black pepper
1- 2 cups baby carrots
1/2 medium onion (sliced)
1 - 10.75 oz can cream of celery soup
1/4 cup dijon mustard

Mashed potatoes

Depending on how many people are in your family, you can adjust the amount of steak & carrots. Sprinkle pepper on the beef & sear on all sides. Add all ingredients to slow cooker. Cook for 8 hours, serve over mashed potatoes.

Apricot BBQ Pulled Pork




You only need 4 ingredients for this slow cooker recipe!

Pork Roast
Spicy BBQ Sauce
1 - 10 oz jar of Apricot Spreadable Fruit
1/2 of a white onion (diced)





I like to sear my meat before adding to the slow cooker, it kills any bacteria that may be on the outside. I am not a huge fan of pork, but I do love bacon. I used a center cut pork roast with bones, it seemed to have the least amount of fat marbling.  Throw all the ingredients in your crock pot & cook on low for 8-10 hours.

Here it is in all of its glory! It literally fell of the bones & I shredded it with 2 forks, with very little effort. This pork was SO tender & delicious! Save the sauce & mix in after you shred! I think the key is finding a cut that doesn't have too much fat marbling throughout. I served ours on Sandwich Thins - buns. At our house we like a 2:1 ratio - meat to bread! You could also have it with garlic bread! Enjoy! And don't forget the pickle chips!

Potato Soup

March is slow cooker month! Here is a brand new crock pot recipe!

Potato Soup Recipe

3-4 large potatoes (peeled & cubed)
1/2 Red Bell Pepper (diced)
1 tbsp white onion (diced)
2 - 14.5 oz Cans of Chicken Broth
1/2 tsp black pepper
Salt if desired

1/2 cup of whipping cream
1/2 cup of shredded cheddar cheese
Turkey Bacon (optional topping)

Add all of the first set of ingredients to the crock pot & cook on low for 8 hours or high for 4 hours. Mash the potatoes with a potato masher. Stir in whipping cream & cheese. Cook up some cripsy turkey bacon in your cast iron skillet & add as topping. We ate our soup with steak, my husband's favorite. For my delicious steak marinade recipe click HERE !
