Thyme & Garlic Chicken

Crock Pot Recipe! I didn't take a picture of this meal, but this easy recipe is delicious! You can cut the chicken with a fork its so tender! Serve with rice & veggies.

2-3 chicken breasts
Salt & Pepper
1 cup of water
1/2 cup of orange juice
1 1/2 tsp dried thyme (crush with fingers as you add to release flavor)
1 tbsp balsamic vinegar
1 tbsp of diced garlic (I have the jar ready to go in my fridge)

Salt & Pepper on chicken & sear it on all sides in a skillet to kill any bacteria on surface. Add all ingredients to crock pot cook on low for 5-6 hours. You can also add salt or a chicken bouillon cube.

Peanut Butter Balls!


These easy treats are PB Rice Crispy Treats! YUM!

PB Balls
1 cup of sugar
1/2 cup light corn syrup
1/2 cup dark brown syrup
2 cups of crunchy peanut butter
4 cups rice crispies cereal

Put sugar & syrups in pot heat on low, then add PB, stir. Add rice cereal, stir. Form into balls on wax paper & then eat!

Brooke's Brunswick Stew


It's not March yet, but I just made made a new crock pot meal! I am always making bbq beef sandwiches for my husband & I am always looking for ways to reinvent left overs! I believe traditional Brunswick Stew is made with chicken & pork, I made mine with my leftover beef. For my crock pot bbq beef recipe search in the blog archive!

4 - 5 cups of shredded bbq beef
16 oz of Beef Broth
1/4 cup ketchup
1 can of 28oz diced tomatoes
2 tbsp worcestshire sauce
1 - 16oz bag of frozen speckled butterbeans
1 can of corn
1 tbsp of brown sugar
Dash or two of hot sauce
1 - Large white onion (diced)
Salt & Pepper - to taste
1 tbsp of dried parsley

Put all of the ingredients in your crock pot & cook on low for 5-7 hours. Easy & yummy! Get in my belly!

March - Crock Pot Month

I am declaring March to be Crock Pot month! I am going to try to make most of my meals in my crock pots. Yes, I said pot(s). I have 5 of them, that is how much I love crock pots.  I am going to try to bring as many different crock pot recipes to you as possible during the upcoming month! Talk about easy delicious-ness!

Pecan - Pineapple - Banana Cupcakes with Grandma's Cream Cheese Frosting



Pecan - Pineapple - Banana Cupcakes
1 small can of crushed pineapple
2 1/4 cups White Wheat Flour (I like King Arthur Brand)
1 1/4 cups sugar
1 tsp cinnamon
1 tsp baking soda
3 eggs beaten
1 cup veg oil
1 cup chopped pecans
1 cup mashed ripe bananas
~ Preheat oven to 350. Sift flour, cinnamon & baking soda. Add all ingredients, you can use mixer or just wooden spoon. Cook for 15-20 mins.
 
 
 
Grandma's Cream Cheese Frosting
1 lb. Powdered Sugar
8oz cream cheese (room temp)
1 tsp vanilla extract
1 tbsp milk
1 stick of butter (room temp)
~ To frost cupcakes, I put a large ziplock baggie inside tall glass with corner down & then load up the frosting, cut off tip & you are ready to go!
 
 For the hearts: I rolled out some light pink fondant & used a small heart cookie cutter, super easy! I also used some hot pink sprinkles! Best kept in the refrigerator! Happy Valentines Day!
